Cooking Wright with Donna: Super Bowl Sunday Let’s Eat Light

Hi Foodie Friends,

Weight Watchers has me feeling great!  Super Bowl Sunday is coming in a few days, and what’s better than staying on the light side of those calories, or points as I do.  How about whipping up BBQ Chicken with Black Beans and Spinach Pizza.  It doesn’t sound like your average football fan will be eyeing this meal.  But I sure will.  So will you once you see how great this recipe is on your palate and on points.

Anyone who does Weight Watchers knows the point system. Every food you eat has a point.  All fruits and vegetable have zero points.  So you can go crazy and shove a bag of carrots down your throat and not gain a point.  Who wants to do that every day?  This recipe is easy and great for leftover chicken that you want to spice up differently.  Plus, it’s only eight points for the entire pizza!  How great is that?

Instead of pizza dough or flatbread,  I am using whole wheat  tortillas.  These are great for pizzas.   Before you get started, pop those babies in the oven on 400 degrees and spray a little canola spray and let them crisp up a little.  This will help hold the chicken and all the deliciousness on the tortilla and not get soft on you.  No one likes a soft, soggy crust.

I also accompanied this dish with roasted broccoli.  YUM! One of my favorites.  Crispy and so full of flavor with just some canola spray, salt and pepper.  I would’ve eaten the entire pan, all for zero points.  That’s right! ZERO.

Who are you rooting for on Super Bowl Sunday.  The Steelers didn’t make it this year, so I guess I will just sit back and cheer and enjoy my eight-point meal.  What’s on your menu this year?   Think healthy!

Ingredients:

1 package of 100% Whole Wheat Tortillas

2 Roasted Boneless and Skinless Chicken Breast

1 can Black Beans

1 package of Fresh Spinach

1/4 cup of Low Fat Shredded Cheese

1 Garlic Clove

1/2 cup BBQ Sauce

Salt and Pepper

Canola Spray

1 tsp. Olive Oil

Directions:

Preheat the oven at 400 degrees.  Salt and pepper both sides of the chicken breast and roast for about 30 minutes until cooked through.  Set aside and let cool.

In a saute pan over medium heat, add olive oil and garlic.  Slowly add fresh spinach as it cooks down, salt and pepper to taste.  Turn off heat.

Cut the chicken into small pieces and place in a mixing bowl.  Drain and rinse the black beans, then use about 1/2 cup and add to the chicken.  Add the BBQ sauce and mix.

After you have crisped up the tortillas, spread about 1/3 cup of chicken and beans over the tortilla, top with spinach and sprinkle about 2 tbsp. of cheese on top.  Place in 400 degree oven for about 5 minutes,  until cheese is melted and heated through.

Cut and enjoy!
